It's been almost 2 months since my Whole30 challenge ended and I have been amazed about the impact it has had on me. Life after my Whole30 challenge has been very interesting! In the beginning when I started the challenge I didn't know if I could really live without my favorite foods. Back in March I took on the Whole30 challenge and it REALLY changed my perspective on food! It also got me to thinking about what I am now calling the "Convenience Factor". All my life I can remember eating food that was either in a box, can, frozen, or fast food. What do all of these have in common? The "Convenience Factor". I am having a hard time blogging recently. My last post was March 31st and it was so exciting to talk about my Whole30 accomplishment! Since then there has been a lot of things going on and no time to sit down and write about any of it. When I did try to write yesterday I was drawing a blank! I just completed my second week on the Whole30 challenge. It's the end of Whole30 week 2 and I am at the halfway point to the 30 days!!! Week 2 brought along with it the flu. It has been seven days and I have been Whole30 compliant ALL week! I have tried so many new recipes and it's been fun discovering new ways of eating! My Whole30 week 1 had a few challenges in it but for the most part I am doing very well! I have been keeping a journal on how things are going and to help remind me of the meals I have been trying out. Eric has been a good sport about it all! I have packed his lunches with his favorites as well as sprinkling in the foods I am trying. He usually eats the Whole30 meal I make for dinner and he has enjoyed them as well. (more…)

I think we have been eating pretty well for the most part but there is always room for improvement. One of the main things I have been focusing on is sugar.
